Development of ready-to-eat (RTE) liwet rice with corn analog rice substitution as an alternative food in emergency conditions

Abstract This research aims to develop ready-to-eat (RTE) rice based on local food, namely liwet which is substituted with corn analog rice. RTE intended for food supplies in disaster emergencies and still contributes the diversification program. The production carried out this study was by using retort process. process an autoclave at 121 0 C 15 minutes used pouch packaging. made five formulations of substitution, 0%, 20%, 30%, 40%, 50%. resulting then analyzed its physicochemical organoleptic characteristics. results showed that substitution had a significant effect proximate content physical properties (texture color) produced but did not significantly affect pH best formula obtained 30%
